Discover why the "new wave" of boutique producers is changing the way we eat. This is not just a tasting; it is an exploration of ikkan-zukuri (the craft from seedling to sake) and the meticulous art of the Japanese conserva.

 Sake Flight: Taste 6 distinct styles of sake, including a rare, allocation-only masterpiece from Akishika Shuzo. Known for their cult status in Japan, Akishika sakes are complex and flavourful—rarely seen on shelves in Singapore.

 The Pairings: We have carefully curated 4 artisanal tins from Japan’s finest canneries of Amanohashidate and Kinoya. From hand-packed seafood preserved in premium oils to fish processed within hours of being caught, you will experience the pinnacle of "fresh-pack" quality.

About the Artisans

Fossa Provisions A team of chocolate makers and food adventurers dedicated to unearthing the "unsung heroes" of the food industry. They believe in supporting real people who grow and catch sustainably.

Akishika Shuzo (Osaka) Led by Hiroaki Oku, this brewery is obsessed with purity. They grow their own organic rice and even mill it on-site (using a machine that costs as much as a Lamborghini!) to ensure every drop of sake is expressive and honest.

The Canneries (Amanohashidate & Kinoya) From the moreish seafood stews of Kinoya to the beautiful, hand-packed seafood of Takenaka Canning Co., these producers prove that when ingredients are this good, the tin is simply a vessel for excellence.
